Some Kinda Good with Rebekah Faulk Lingenfelser: Savor the season

During each new season, there are a few dishes I greatly anticipate cooking: Spring beckons salads and grilled vegetables, summer calls for hamburgers, and nothing comforts the soul in winter like warm soups and casseroles. Fall, though - fall might just be the season to beat. With the exception of the holidays, I don't think I look forward to eating more any time of the year.

Even as the leaves begin to hit the ground and change to beautiful hues of orange and red, as colorful gourds and pumpkins decorate our homes and the hot summer temperatures turn to cooler, outdoor friendly ones, something wonderfully inspiring happens. Whether it's the energy of a new football season, the anticipation of the county fair and fair food - those irresistible funnel cakes with powdered sugar, sweet candy apples or fried Oreos on a stick - autumn encourages me to take a walk outside, to look around and admire creation, to stop and feel the breeze.

Unfortunately, though, it is a season that easily can become overshadowed by eager, holiday-hungry retail stores. One major retailer launched its first holiday TV commercial on Sept. 9. While I adore Christmastime, a shopping center that resembles Dr. Seuss's Whoville before a single leaf hits the ground makes me feel like a fish out of water. October spirals into Halloween, then it's Thanksgiving and soon Christmas. It all happens so fast! One moment we're appreciating the leaves, the next we're celebrating a new year.

This year, it's my goal to take the season one day at a time. I want to savor the aroma of Honey-Rosemary Stuffed Pork Chops simmering in white wine on my stovetop. I want to relish in my second cup of coffee and sit on my screened-in back porch in the cool of the gnat-free morning as I await Jumbo Pumpkin Pecan Muffins and Cinnamon-Nutmeg Spiced Coffee Cakes baking in the oven. I want to ride the Ferris wheel with the one I love, watch the pigs race and smell the good ol' livestock at the Kiwanis Ogeechee Fair. I want to chant "One more time!" loudly with the crowd when the Georgia Southern Eagles kick off in the Prettiest Little Stadium in America. I want to savor the season.
