Food service inspections - November, Part 1

    The following are among the food service establishments inspected in November by the Bulloch County Health Department. The department scores on a 100-percentile scale. Kitchens are inspected at least every four months and are required to post their score sheets in public. The score and selected comments from health inspectors are included in each report. Nov. 1
Chow Time, 410 Northside Drive  Score: 80

    Cover all personal drinks. Do not keep personal drinks in coolers stored above food. Get soap at all hand sinks. Cover all foods. There are four ways to thaw: during cooking process, in cooler, in microwave or submersed in cool running water. Store raw meats below other items in cooler. Repaint/seal any wood in the kitchen that is not sealed. Seal doors to prevent flies from coming in. Rid kitchen of flies. Inspector: Brad Wiggins.

Waffle House #910, 446 South Main Street  Score: 92
    Store meat in cooler wrapped and in approved containers. Observed single-service articles handled, displayed or dispensed in a manner that allows for contamination. Counter above hand-wash sink is pitted — food debris present. No proper chemical test kit provided for measuring the concentration of the sanitizer solution used for wiping cloths. Clean walk-in cooler racks. Clean or remove broken waffle irons from back room. Clean under dish machine. Inappropriate storage of non-food items noted. Inspector: McKanna.

    Food preparer handled raw fish with gloves and did not change or wash hands before doing other duties — handling plates and cooked food. Repair and clean floors where needed. Clean vent covers. Inspector: Street.

Uncle Shug's, 12399 Highway 301 South Suite A  Score: 86
    Clean potato slicer and utensils in bins; utensils are dirty and stored in dirty bins. Store eggs below ready-to-eat foods — cabbage slaw. Do not store unapproved items in freezer — deer head. Do not use prep sink for hand washing. Store ice scoop with handle out of ice. Need test strips. Shelves in walk-in cooler need cleaning. Floors need cleaning in areas. Inspector: Street.

Wiping cloths must be stored in sanitizing solution or dirty towel container when not in use. All scoops must have handles. In-use utensils must be stored handle-up out of food product.     No certified food manager for establishment. Personal beverages noted above and next to food/equipment/containers. Food build-up noted on utensil bins. Observed equipment and utensils not washed, rinsed and sanitized in the correct order in 3-compartment sink. Observed single-service articles handled, displayed or dispensed in a manner that allows for contamination. Rusted shelving, missing vent hood parts, broken door hinges, broken door handles and burned pans noted. No proper chemical test kit provided for measuring the concentration of the sanitizer solution used for wiping cloths. Observed equipment rinsed in hand-wash sink. Catch pans under spices, outer mixer housing and equipment pieces in dry storage are dirty. Personal items noted around food and containers in dry storage. Inspector: McKanna.
